Palazzetta del Vescovo offers its guests a wide selection. There are approximately 130 labels covering the most important Italian wine regions. Of course, the most significant space is dedicated to Umbrian producers and the well-known wines and grape varieties of the region, such as Montefalco Sagrantino, Orvieto Classico, Grechetto, and Trebbiano Spoletino. All the wineries on the wine list have been carefully selected by Stefano; they often represent small-scale, high-quality realities that would otherwise be difficult to discover. The wines await tasting in the extensive underground cellar, ensuring the best storage conditions.

The raw materials, always fresh and genuine, are carefully selected by Paola, the chef, and come from our garden and small local producers who respect their love for their territory, giving rise to a simple cuisine with unmistakable flavors and aromas.
Cooking and wine are the great passion of Paola and Stefano. Stefano, a professional sommelier, will take you on a journey to discover local and beyond-local producers who are passionate about their work, suggesting the best pairings. The raw materials, always fresh and genuine, are carefully selected by Paola, the chef, and come from our garden and small local producers who respect their love for their territory, giving rise to a simple cuisine with unmistakable flavors and aromas.
Alongside her duties as cook for La Palazzetta del Vescovo, Paola will be happy to share her family recipes with you. Alternatively, she can recommend cooking schools that share the same passion and philosophy for good food as we do. Discover traditional Umbrian recipes in a friendly and informal environment. Rolling out fresh pasta by hand like our grandmothers used to do, making a typical dessert and transforming garden vegetables into a tasty appetizer are just some of the things you will learn during practical and hands-on lessons which are suitable for beginners as well as those who have more experience in the kitchen. Courses are organized by reservation only for a minimum of 2 participants, based on availability.

Enjoy a walk in the woods and discover a way of life made of great love for the land and its bounty. During the walk, you will also learn useful information on which plant varieties favor the birth of this prized underground fungus. At the end of the trek, you can enjoy a sampling of truffle products and savor the goodness of this “black gold”.
